What is everyone making for dinner tonight? I love quick, easy meals that you can make in one pan, so here's what I'm making tonight:

Beef Taco Skillet
1 lb. ground beef
1 can Campbell's Low-Sodium Tomato Soup
1/2 cup Salsa
1/2 cup water
6 flour tortillas cut into 1" pieces
1/2 cup low-fat shredded Cheddar cheese

1. Cook beef in 10" skillet until well browned, stirring to break up meat. Pour off fat.

2. Stir in soup, salsa, water, tortillas. Heat to a boil. Reduce heat to low and cook for 5 minutes. Top with cheese. Makes 4 servings.

I've tried to make this recipe healthier by using low-sodium soup and low-fat cheese. I've also found that you can reduce the amount of beef to 1/2 lb. instead of 1 lb. I also use Pinata brand flour tortillas, which are available at Baker's, because they tend to be lower in sodium content than other tortillas.

If you have some dinner recipes you'd like to share, please post them. My family is getting tired of eating the same things all the time, so I could use some inspiration!
